2 Tablespoons of olive oil
5 fresh ghost chile peppers
11 fresh jalapeno peppers
9 fresh Scotch bonnet peppers
5 Fresh red Thai peppers
11 habanero peppers
1 cup cayenne pepper
1 cup Cajun seasoning blend
8 cloves raw garlic, minced
1 cup crushed red pepper flakes
1 cup white vinegar
1/2 cup mayonnaise
1/4 cup lime juice
3 cup extra-hot wing sauce
Add olive oil, garlic, 10 habaneros and jalapenos, 8 Scotch bonnets, Thai chile peppers, and onions to a pan over medium heat. Cook all for at least 3 minutes.
Then add 1/2 cup of the Cajun spice, cayenne, and crushed red pepper. Cook that for a minute. Pour into a blender and puree after it’s done cooking. the puree can be put in the refrigerator to cool.
Once it’s cool enough, add the remaining 1/2 cup Cajun seasoning, crushed red pepper and cayenne to spice it up. You can then stir in the wing sauce lime juice, vinegar, and mayonnaise. Add the raw chili pepper and stir.
