1 large shallot, cut into 8 wedges
1 ripe peach, cut into 8 wedges
1 olive oil
2 Table spoon unsalted butter
1 to 2 Table spoon chopped fresh herbs
2 bone-in, thick-cut pork chops
How to Make It:
Preheat the oven to about 425°F. In a normal cast-iron grill pan, heat the oil on medium high.
Season the pork chop with salt and pepper; pop it into the pan.
Sear it until grill marks form on the bottom, about 3 minutes, and then flip and add the shallot and move it and transfer the chop to a plate to rest for 5 minutes.
Meanwhile, add the butter and herbs to the pan and toss with the peaches and shallot; serve alongside the pork chop. Drizzle with the herb butter.
Serve with any good drink of your choice.
